From time to time, we create one of our “X-wines”, which reflect some of our experiments in winemaking. Typically these are low-production wines that explore a new or novel approach to fermentation or wine production. The techniques involved may (or may not) find their way into other blends in subsequent vintages. For the 2019 vintage, we produced the X-3, which is an exploration of texture and some characteristics of red wines in a white wine. It includes 12% skin-fermented Viognier, 24% Roussanne done in a minimalist “death and resurrection” style, 14% Grenache Blanc and the balance being Viognier and Roussanne made using more conventional barrel fermentation techniques.
